Food can be sterilized under high pressure. This requires pressures of 500 MPa and up. Industrial application tends to stay below 700 MPa.
Sterilisation is done in pressure vessels, which are pressurized by pumps with tap water with reduced hardness. The volume needed to build up the pressure mainly depends on the size of the pressure vessel. High capacity HP – pumps are required in order to minimize the cycle time. Especially for pumps with high power supply, a flexi power train is preferred, which maintains a constant pressure – volume – product over a wide pressure range and saves energy.
